In the United States today, obesity effects more than 70 million Americans, and taken as a whole, we carry around 2.3 billion pounds excess body fat! To achieve Optimum Weight Control, we must choose a water rich high carbohydrate, low fat, high fiber diet combined with a consistent exercise program.
Let’s first discuss our diet as compared to those of other countries. In our country, only 22% of our diet is composed of complex carbohydrates (unprocessed whole grains, beans, fruits and vegetables) and as a result, over 32% of our people are obese. In countries such as Uruguay and Venezuela where they eat a diet higher (53 60%) in fiber and starchy complex carbohydrates, only 20% of the people are overweight. Yet when you examine countries where the diet is composed of over 70 80% complex carbohydrates, obesity is almost nonexistent.
